- Cajun Seasoning: My preferred Cajun Seasoning is Savory Cajun Seasoning because it’s full of flavor and low in sodium. That way, I can use a little extra without worrying about my food being too salty.
- Creole Mustard: This is the base of my favorite sauce for fried green tomatoes. I love the tangy, sharp flavor of Creole mustard. Dijon mustard is a notable swap, but it’s more sweet than tangy.
- Heavy Cream: This makes our sauce extra creamy. You can lighten it up by using sour cream or Greek yogurt, but it won’t be the same. For the creamiest dipping sauce, stick to the original.
- White Pepper: A little goes a long way and ensures that the dipping sauce is well-balanced. I used white pepper, but feel free to use black pepper if preferred.

Step 1: Prep Green Tomatoes
Season tomato slices evenly on both sides with Cajun seasoning. Add flour, bread crumbs, garlic powder, cayenne, salt, and pepper to a small bowl.
In another bowl, beat eggs with salt and pepper. Dredge each tomato slice in the egg mixture, then the flour and panko mixture until all tomatoes are evenly coated.

- Pay attention to how thick you slice your green tomatoes. Thinner tomatoes will cook faster and may fall apart while cooking. On the flip side, too large of a cut will make the green tomatoes take longer to cook and may result in burning the crispy coating.
- For the crispiest air fryer fried green tomatoes, make sure to place them in the air fryer basket in a single layer and keep them from touching. You may need to fry in batches depending on the size of your air fryer.
- Feel free to use gluten-free flour and panko bread crumbs for gluten-free fried green tomatoes.
- The key to ensuring that your batter sticks to the green tomato slices, press each slice firmly into the batter when you first add it in. Then, toss to cover evenly.
- My Savory Cajun Seasoning is low in sodium, so if you want to use more seasoning on your green tomato slices, go for it.
- Every air fryer basket is different in size, so only batter just before frying. Some recipes call for letting the batter set for 10 minutes, but I’ve found that the green tomato juices make the batter soggy if you wait too long to air fry.

Place the baking sheet in the freezer for an hour, then transfer the fried green tomatoes to an airtight container or freezer-safe bag. You can freeze fried green tomatoes for up to 3 months. Ingredients
Fried Green Tomatoes:
- 4 green tomatoes sliced ¼ inch
- 1 tablespoon Savory Cajun Seasoning
- 1 cup unbleached flour
- ¾ cup panko
- 2 teaspoons garlic powder
- 1 teaspoon cayenne
- 1 teaspoon kosher salt divided
- 1 teaspoon black pepper divided
- 2 large eggs
- cooking spray
Creole Mustard Sauce:
- 1 cup heavy cream
- ½ cup creole mustard
- ½ teaspoon kosher salt
- ¼ teaspoon white pepper
Instructions
- To make fried green tomatoes: Season tomato slices evenly on both sides with Cajun seasoning. In a bowl add flour, panko, garlic powder, cayenne, ½ teaspoon salt and ½ teaspoon black pepper.
- In another bowl beat eggs with remaining salt and pepper. Dredge tomatoes slices in egg, then flour and panko mixture. Spray air-fryer basket with cooking spray, then layer green tomatoes evenly. Air-fry at 400°F for 10 minutes, flip tomatoes over, spray with cooking spray and cook for 3 minutes or until golden brown.
- To make Creole mustard: While the green tomatoes air fry. In a medium bowl mix all ingredients together until smooth. Sauce will remain fresh for 14 days. Serve fried green tomatoes hot with a teaspoon of sauce and enjoy!
