Arugula and Pomegranate Salad

I had the wonderful opportunity to be a guest on “The 504” for a cooking segment about cooking for your boo a.k.a. Valentine’s Day! My inspiration for my arugula and pomegranate salad recipe was to use foods known as aphrodisiacs. That started a wonderful conversation during the show, to say the least. Personally, I believe that food is a natural aphrodisiac especially when it’s good food.

Here’s some information on what makes arugula, pomegranate, and basil aphrodisiacs.

If you cannot find arugula use spring mix or your favorite salad greens.

Can you make it ahead?

Fridge: You can make the salad a day in advance. Just don’t add the balsamic dressing.

Ingredients
  

  • 5 oz. arugula
  • 4 oz. balsamic dressing
  • ½ teaspoon kosher salt
  • ½ cup pomegranate seeds
  • ¼ cup parmesan cheese shredded

Instructions
 

  • In a bowl add arugula, balsamic and salt; toss together and divide on a plate. Sprinkle pomegranate and parmesan evenly over both salads.
