Ingredients

  • 4 russet potatoes or sweet potato washed
  • 2 teaspoons kosher salt
  • 2 teaspoons black pepper
  • 2 tablespoons unsalted butter
  • 1 warm rotisserie chicken skin removed, boneless
  • 2 cups favorite bbq sauce
  • ½ cup shredded cheddar cheese garnish, optional
  • 4 oz. sour cream garnish, optional
  • 2 green onions chopped, garnish, optional

Instructions

  • Pierce potatoes with a fork all over, pop 2 potatoes in the microwave for 5 minutes. Turn potato over and cook for another 5 minutes. Touch potato to see if it’s soft to touch, if not cook for another 2 minutes. When potatoes are finished cooking, cut down the middle evenly season potato with ¼ teaspoon salt, ¼ teaspoon pepper and 1 tablespoon butter.
  • While potatoes are in the microwave, over a bowl, remove skin and bones from meat and pull meat apart with your hands or two forks. Once all meat is in bowl, pour bbq sauce over and evenly coat chicken. Add chicken on top of potato and garnish with chicken, cheese, sour cream and green onions.

Notes

If the chicken is too hot to pull apart, allow to cool off and after you toss it in bbq sauce pop in the microwave for 1-2 minutes to reheat.
You can add ½ pound of burnt ends, pulled pork or soyrizo for this baked potato.
