This BBQ Chicken Baked Potato recipe is full of deliciousness and pretty versatile. All you need is a working microwave, rotisserie chicken and your favorite bbq sauce and you’ll be eating good!

Don't skip the piercing of the potato. This helps the potatoes steam and cook thoroughly.

Fridge: After baked potato cools off, place in an airtight container in the fridge for 7 days max.
Reheating: Pop in a 350-degree oven for 10-15 minutes.
Substitution Options:
You can add ½ pound of burnt ends, pulled pork or soyrizo for this baked potato.

BBQ Chicken Stuffed Baked Potato
Ingredients
- 4 medium sized russet potatoes or sweet potato washed
- 2 teaspoons kosher salt
- 2 teaspoons black pepper
- 2 tablespoons unsalted butter
- 1 warm rotisserie chicken skin removed, boneless
- 2 cups favorite bbq sauce
- ½ cup shredded cheddar cheese garnish, optional
- 4 oz. sour cream garnish, optional
- 2 green onions chopped, garnish, optional
Instructions
- Pierce potatoes with a fork all over, pop 2 potatoes in the microwave for 5 minutes. Turnover, cook for another 5 minutes. Touch potatoes to see if it’s soft to touch, if not cook for another 2 minutes. When potato is finished cooking, cut down the middle evenly season potato with ¼ teaspoon salt, ¼ teaspoon pepper and 1 tablespoon butter.
- While potatoes are in the microwave, over a bowl remove skin and bones from chicken and pull meat apart with your hands or two forks. Once all meat is in bowl, pour bbq sauce over and evenly coat chicken. Add chicken on top of potato and garnish with chicken, cheese, sour cream and green onions.
