Broccoli and Tomatoes
Tips for success: Covering the skillet allows the broccoli to steam and makes this dish simple and refreshing.
Equipment
- Large bowl
- Chef knife
- Cutting board
- Dry measuring spoon
Ingredients
- 16 oz. broccoli florets
- Cooking spray
- 16 oz. cherry tomatoes
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- ¼ cup low sodium chicken stock
Instructions
- In a bowl add broccoli and spray with cooking spray for 3 seconds, season with kosher salt and black pepper, then toss. Turn on the heat to medium in a large skillet add broccoli and cook for 2 minutes, stir a few times. Add the cherry tomatoes, stir and cook for 1 minute. Add chicken stock and cover with lid and cook on low heat for 5 minute. Each serving size is 4 oz.
