Cooking Tips:

When reducing the sauce to a glaze if you notice it’s cooking to fast, remove from heat for 1 minute, then turn the heat to low.

Can you make ahead?

Fridge: After sauce cools off, place in an airtight container in the fridge for 7 days max. Sauce will be fresh for 5 days at room temperature.

  • Zest of 2 small lemon
  • Zest of 2 small lime
  • Juice of 2 grapefruit
  • Juice of 2 small lemon
  • Juice of 2 small lime
  • 2 teaspoons salt
  • 1 jalapeno stem removed, chopped
  • 8 garlic cloves
  • ½ cup agave
  • 2 tablespoons dark brown sugar


  • Place all ingredients in a food processor and blitz on high for 1-2 minutes until smooth. Transfer to a small pot, bring to a boil and cook until sauce thickens about 10 minutes. Use immediately or once glaze cools, place in a airtight container, leave out at room temperature for 5 days.
