I'm glad I thought of using collard greens for coleslaw. It's actually pretty easy and really amazing!

Collard Green Coleslaw
Cooking Tips:
Wash your collards in water with some salt. The salt with help remove the dirt and debris.

Fridge: Place in an airtight container in the fridge for 3 days max.

Collard Green Slaw
Ingredients
- 1 bunch collards washed, stems removed, sliced
- ¼ head red cabbage washed, stem removed, sliced
- ½ cup mayonnaise
- ¼ cup white vinegar
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a bowl mix mayonnaise, vinegar, salt and pepper together, toss collards and cabbage and sit to the side for 10 minutes before serving.
