- 1 tablespoon avocado oil
- 1 lbs. baby spinach
- 1 ½ cups half and half
- 6 oz. cream cheese diced
- 1 cup parmesan grated
- 1 ½ teaspoons black pepper
- ½ teaspoon garlic powder
- Heat a pot over medium heat add the avocado oil and spinach, stir until spinach is wilted. Add the remaining ingredients and bring to a boil, stirring occasionally, reduce heat to a simmer and cook for 3 minutes. Serve hot.
