    Cooking Tips:

    Once you add the dairy, stir for 1 minute to make sure the cheeses do not stick to the bottom of the pot.

    Can you make ahead?

    Fridge:  After spinach cools off, place in an airtight container in the fridge for 7 days max.

    Reheating: Pop in a 350-degree oven for 10-15 minutes.

    Ingredients
      

    • 1 tablespoon avocado oil
    • 1 lbs. baby spinach
    • 1 ½ cups half and half
    • 6 oz. cream cheese diced
    • 1 cup parmesan grated
    • 1 ½ teaspoons black pepper
    • ½ teaspoon garlic powder

    Instructions
     

    • Heat a pot over medium heat add the avocado oil and spinach, stir until spinach is wilted. Add the remaining ingredients and bring to a boil, stirring occasionally, reduce heat to a simmer and cook for 3 minutes. Serve hot.
