Smoked Salmon Scramble
Tips for success: Smoked salmon is different from your traditional sausage and bacon but you can have 2 ounces of smoked salmon that’s only 120 calories of goodness. You can find out how many calories 2 ounces of bacon have. I only use large brown eggs, they have a richer yolk which equals flavor.
Equipment
- Chef knife
- Cutting board
- Dry measuring spoons
- Small skillet
- Small bowl
Ingredients
- 1 large egg
- 2 large egg whites
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1-2 teaspoons chopped Italian parsley
- 1 tablespoon avocado oil
- 2 ounces smoked salmon
Instructions
- In a small bowl add egg, egg whites, kosher salt, black pepper and Italian parsley. Beat until eggs are homogenous. Turn on the heat to medium-high in a small non-stick skillet add avocado oil, add egg mixture and stir until egg solidify about 2 minutes. Serve hot and garnish with smoked salmon.
