HARVEST SALAD WITH LEMON HERB VINAIGRETTE
Ingredients
- 1 small butternut squash peeled & cubed
- 1 pound heirloom carrots peeled & sliced on diagonal
- 1 yellow bell pepper chopped large
- 1 large red onion sliced
- 2 cups parsley arugula or spinach, chopped
- 2 tablespoons olive oil divided
- ½ cup shaved parmesan
- Lemon Herb Vinaigrette
- ½ cup extra-virgin olive oil
- ¼ cup freshly squeezed lemon juice
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- 1 teaspoon finely grated lemon zest
- 1 teaspoon Worcestershire sauce
- ½ teaspoon garlic minced
- ½ teaspoon Italian seasoning
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
