Cooking Tips:
Use any vegetable you want for your rice. Vegetables that can be chopped small works best.
You can use vegetables stock to make this plant based or vegetarian friendly.
Can you make ahead?
Freezer: After rice cool off, place in an airtight container in the freezer for 3 months max. Thaw 48 hours before using.
Fridge: After rice cools off, place in an airtight container in the fridge for 7 days max.
Reheating: Bring a small amount of water or stock to a boil and stir in rice, cook until hot. *A ¼ cup of liquid will be enough for 1 cup.

Jasmine Vegetable Rice
Ingredients
- 1 tablespoon canola oil
- ½ onion chopped
- ½ red bell pepper chopped
- ½ orange bell pepper chopped
- 1 garlic chopped
- 1 tablespoon ginger chopped
- 1 ¼ cup jasmine rice
- 2 cups unsalted chicken stock
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- In a pot over medium heat, add oil, onion and bell peppers cook for 3 minutes. Add garlic and ginger stir then add rice, salt and pepper cook for 1 minute, add stock bring to a boil reduce heat cover with lid and cook on low heat for 14 minutes.
