The best tahini paste in my opinion have a layer of fat at the top. Joyva and Ziyad are my go-to tahini paste.

Fridge: Place in an airtight container in the fridge for 7 days max.

If you're in a rush you can skip charring the garlic. Just smash it and add it to the food processor.

Lemon Tahini Dressing
Ingredients
- ½ cup tahini paste
- ⅓ cup water
- zest of 1 lemon
- juice of 1 lemon
- 2 garlic cloves charred
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Add all the ingredients to a small food processor and blitz on high for 1 minute. Taste and adjust seasoning. Keep salad in an airtight container in the refrigerator for 7 days.
