New Orleans Mushroom BBQ Sauce over Cheesy Grits (Vegan)

Ingredients
  

Cheesy Grits:

  • ½ stick vegan butter
  • 2 cups unsweetened cashew milk or nut milk of your choice
  • 2 cups low sodium vegetable stock
  • ¼ teaspoon kosher salt
  • ½ cup grits
  • 4 ounces vegan cheese
  • 1-2 tablespoons Nutritional Yeast

New Orleans Mushroom BBQ Sauce:

  • 2 1/2 sticks vegan butter divided
  • 8 oz mushrooms or vegetables of your choice cleaned
  • 3 tablespoons creole seasoning
  • 6 cloves garlic minced
  • 4 teaspoons creole seasoning
  • 2 teaspoons black pepper
  • 1 sprig of rosemary chopped
  • 2 tablespoons vegan Worcestershire sauce
  • juice of 1 lemon
  • 6 oz. beer
  • 2 sticks cold vegan butter cut into tablespoons
  • 1 bunch green onions sliced small

Peach Simple Syrup

  • cups organic cane sugar
  • cups water
  • 10 ounces frozen peaches defrosted and chopped
  • 1/4 cup mint leaves

Tea

  • 4 bags black tea or
  • 4 tablespoons of loose-leaf black tea
  • 8 cups cold water
  • 6 oz frozen peaches
  • Mint for garnish
  • 1-2 oz Maker’s Mark or Bourbon per serving
