    Pecan Waffles

    These Pecan Waffles are loaded with pecans and kissed with cinnamon to produce a fluffy and delicious treat.

    Here are a few side dishes to serve with your waffles: Cheese Omelette, Cheddar Cheese Grits, French Toast, Breakfast Hash, Sweet Potato Hash, and Smoked Gouda Grits.

    I love breakfast—so much that my family has breakfast for dinner at least twice a week. And that's where my pecan waffle recipe makes a grand entrance!

    I was used to eating pecan waffles at the Waffle House after a long, late night of partying. However, I didn't always want to rely on them to make me warm, fluffy, and buttery waffles, so I took it upon myself to make some delicious creations at home.

    Now, I tried everything from toasting the pecans to wake up the nutty flavor, only to realize that extra effort didn't come through, to separating the egg whites and beating them to stiff peaks and egg yolks to create a taller, lighter waffle. I'm only to admit that it produces a great waffle, but when I'm trying to whip up a fast breakfast, that's a tedious task I don't want.

    So I took my go-to buttermilk waffles recipe, added some chopped pecans and a kiss of cinnamon, and Houston, we have a winner.

    I will tell you how to make fluffy, yummy waffles that will make even the pickiest eater in your house ask for seconds.

    Pecan Waffles Ingredients

    Here are the ingredients you'll need to make the perfect pecan waffles.

    Unbleached All-Purpose Flour

    Of course, you can use traditional all-purpose flour. I only buy unbleached flour; its extra protein is best for baking and breakfast items, like waffles!

    Pecans

    Pecans have always been a favorite nut. They're a good source of protein, fiber, healthy fats, and vitamin E, magnesium, potassium, and zinc.

    Salt

    Always add a pinch of kosher salt to wake up the sweet flavors in the other ingredients.

    Baking powder

    It will help our buttermilk waffles become fluffy. I prefer baking powder over baking soda.

    Sugar

    Sugar helps the waffle get its golden brown color. Adding enough sugar will make it sweet, but a couple of tablespoons is all that is needed. 

    Buttermilk

    I use only buttermilk in my waffles. I love the tangy flavor and light, tender texture that buttermilk adds to waffles.

    Oil

    I like using oil to create a crisp exterior with a pillowy soft interior.

    Ground Cinnamon

    A little cinnamon adds a subtle warmth to these butter pecan waffles that play well with maple syrup.

    Tools

    You'll need the following tools: two mixing bowls, dry measuring cups, dry measuring spoons, a liquid measuring cup, a wooden spoon or whisk, a waffle maker (I used the Cuisinart Classic Waffle Maker), and a fork to remove the waffles.

    How To Make Pecan Waffles

    Let's make some finger-licking pecan waffles! This recipe is easy to follow and works in any waffle iron.

    Preheat oven to 200°F. In a large bowl, whisk the flour, sugar, baking powder, salt, and cinnamon, then add the pecans.

    Beat eggs, buttermilk, oil, and vanilla extract together in a medium bowl.

    Pour the wet ingredients into the dry ingredients and mix until smooth. Set aside for 10 minutes.

    Heat the waffle iron to medium (3 or 4) and spray it with non-stick cooking spray. Pour enough batter to cover the bottom of the hot waffle iron, close the waffle iron, and cook for 3-4 minutes, until golden brown or your desired color.

    Place the cooked waffles in a warm oven until all are made.

    Serve warm, garnished with more chopped pecans and butter, and serve with maple syrup.

    How to Store Leftover Waffles

    Waffles are best eaten immediately, but they will remain fresh for three days in an airtight container in the fridge. 

    Please keep them in a freezer-safe container and freeze them for 3 months. 

    Reheat the waffles in the toaster for 1-2 minutes. Do the same for frozen waffles. Cooking them in a toaster oven will help them get crispy outside, like fresh out of the waffle iron.

    Pro Recipe Substitutions, Tips & Tricks

    Here are the best techniques and substitutes you'll need to know about making homemade waffles.

    • You can buy 1 cup of chopped pecans, chop them yourself, or give them a quick blitz in the food processor.
    • Feel free to use any other nuts instead of pecans. Almonds, walnuts, cashews, and peanuts should make for yummy waffles.
    • Do not stack your waffles in a warm oven. It causes them to steam and become soggy.
    • Using room-temperature eggs allows them to blend better with the other ingredients. If you forget to take your eggs out, do not worry; as the batter rests for 10 minutes, the eggs naturally come to room temperature.
    • Feel free to use gluten-free flour as a swap for all-purpose flour for gluten-free waffles.
    • Feel free to use light brown sugar instead of raw or granulated sugar.
    • Every waffle maker is different, so I always use my first waffle as a test to see how my waffle iron cooks. I usually need more time than the manufacturer's instructions call for.
    • Feel free to use any milk you have at home instead of buttermilk.
    • You can use melted butter instead of oil, adding more flavor and producing a softer and fluffier waffle.
    • Have fun and use almond extract instead of vanilla extract.
    • If you like your waffle batter sweeter, double the sugar in the recipe.
    • Maple syrup is entirely different from Log Cabin, Pearl Milling, or Mrs. Buttersworth's. Spend the extra money and get the good stuff.

    Waffle Toppings

    Equipment

    • 1 Classic Waffler Maker

    Ingredients
      

    • 1 cup chopped pecans
    • 1 ½ cups unbleached all-purpose flour
    • 2 tablespoons granulated sugar
    • 1 ½ teaspoon baking powder
    • ½ teaspoon kosher salt
    • 2 teaspoons cinnamon
    • 2 large eggs
    • 1 ½ cups buttermilk
    • 4 tablespoons oil
    • 2 teaspoons vanilla extract

    • Grade A maple syrup

    Instructions
     

    • In a large bowl, mix flour, sugar, baking powder, salt, cinnamon and pecans.
    • In a medium bowl, beat eggs, buttermilk, oil, and vanilla together; pour the wet ingredients into the dry ingredients and mix until smooth. Set aside for 10 minutes.
    • Heat the waffle iron to desired temperature or color and spray it with cooking spray. Pour enough batter to cover the bottom of the waffle iron, close the waffle iron and cook for 3-4 minutes, depending on the desired color. Place cooked waffles in a 200°F oven until all waffles are made.
    • Serve warm, garnished with more chopped pecans and butter, and serve with maple syrup.
