Power Banana Pancakes
Tips for success: If you’re not a fan of bananas you can omit them and just use this for a great pancake recipe. Feel free to substitute bananas for blueberries or strawberries. This homemade maple syrup will surprise you in how something so simple can be easy to make and delicious.
Equipment
- Large bowl
- Liquid measuring cup
- Dry measuring spoons
- Spatula
- Small pot
- Large skillet
Ingredients
Homemade Maple Syrup:
- ½ cup truvia brown sugar
- ½ cup water
- ½ teaspoon vanilla extract
- 2 teaspoons maple extract
- 1 tablespoon unsalted butter
Power Pancakes:
- ¾ cup whole wheat flour
- ¼ cup unbleached all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- ¼ teaspoon nutmeg
- 1 cup unsweetened cashew milk
- 2 tablespoons avocado oil
- ½ teaspoon vanilla extract
- 1 large egg
- 2 ripe bananas mashed
- cooking spray
Instructions
- Turn the heat on to medium in a medium size sauce pot add truvia and water, bring to a boil and cook for 10 minutes. Remove from heat, stir in maple extract, cook for 1 minute, remove from heat and stir in butter. Allow mixture to cool about 30 minutes then store in an airtight container for 2 weeks.
- In a large mixing bowl add the whole-wheat flour, all-purpose flour, baking powder, baking soda, kosher salt and nutmeg, stir once or twice. In a bowl add the cashew milk, avocado oil, vanilla extract and egg, stir together and blend well. Add wet batter and bananas to the dry mix and blend until batter is smooth, allow to rest for 5 minutes.
- Turn on the heat to medium heat and in a large skillet spray with cooking spray for 5 seconds, pour in ¼ cup of batter per pancake and cook until top of batter has air bubbles forms, about 2 minutes. Flip and cook for another 2 minutes. Serve 2 pancakes with 1 tablespoon maple syrup.
