Power Blueberry Waffles
Tips for success: If you do not have a waffle iron you can just add the blueberries to the pancake recipe but you can always get an inexpensive waffle iron that will do the job.
Equipment
- Large bowl
- Dry measuring spoon
- Dry measuring cups
- Liquid measuring cups
- Waffle iron
Ingredients
- 1 cup whole wheat flour
- ½ cups unbleached all-purpose flour
- ½ teaspoon kosher salt
- 1 ½ teaspoon baking powder
- 1 tablespoon truvia brown sugar
- 2 large eggs
- 1 ½ cups unsweetened cashew milk
- 2 tablespoons avocado oil
- 1 teaspoon vanilla extract
- cooking spray
- 1 ½ cups homemade maple syrup
Instructions
- In one bowl mix the whole-wheat flour, all-purpose flour, kosher salt, baking powder and sugar.
- In another bowl the slightly beat eggs, cashew milk, avocado oil and vanilla together; pour wet mixture into dry and mix until smooth.
- Heat waffle iron to desired temperature or color and spray with cooking spray for 3 seconds. Pour enough batter to cover the bottom of waffle iron, close waffle iron and cook for 3-4 minutes. Remove and continue until all waffles are made. Keep made waffles warm in a 200-degree oven. Serve 2 warm waffles with 1 tablespoon of maple syrup.
