Tips for success: If you do not have a waffle iron you can just add the blueberries to the pancake recipe but you can always get an inexpensive waffle iron that will do the job.

Equipment

  • Large bowl
  • Dry measuring spoon
  • Dry measuring cups
  • Liquid measuring cups
  • Waffle iron

Ingredients
  

  • 1 cup whole wheat flour
  • ½ cups unbleached all-purpose flour
  • ½ teaspoon kosher salt
  • 1 ½ teaspoon baking powder
  • 1 tablespoon truvia brown sugar
  • 2 large eggs
  • 1 ½ cups unsweetened cashew milk
  • 2 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • cooking spray
  • 1 1/2 cups homemade maple syrup

Instructions
 

  • In one bowl mix the whole-wheat flour, all-purpose flour, kosher salt, baking powder and sugar.
  • In another bowl the slightly beat eggs, cashew milk, avocado oil and vanilla together; pour wet mixture into dry and mix until smooth.
  • Heat waffle iron to desired temperature or color and spray with cooking spray for 3 seconds. Pour enough batter to cover the bottom of waffle iron, close waffle iron and cook for 3-4 minutes. Remove and continue until all waffles are made. Keep made waffles warm in a 200-degree oven. Serve 2 warm waffles with 1 tablespoon of maple syrup.

Preheat oven to 200 degrees
