Soyrizo & Pinto Bean Tostadas
Ingredients
Pinto Beans:
- 2 tablespoons oil
- ½ yellow onion chopped small
- ½ jalapeno chopped small
- 2 garlic cloves chopped fine
- ½ teaspoon dry oregano
- 2 teaspoons cumin
- 1 ¼ teaspoon salt
- 1 teaspoon black pepper
- 2 15 oz. can pinto beans drained
- 1 cup water
Chipotle Soyrizo:
- 1 cup water
- 1 teaspoon black pepper
- 1 teaspoon coriander
- 1 chipotle pepper in adobo sauce chopped small
- 2 garlic cloves chopped fine
- 12 oz. soyrizo
- 16 corn tortillas
- 1 cup canola or vegetable oil
- 8 sprigs cilantro garnish
- ½ cup shredded Mexican cheese garnish
- 1 cup pico de gallo store-brought, garnish
Spicy Guacamole:
- 3 avocados halved, seeded, and mashed
- ¼ onion medium diced
- 1 jalapeno chopped fine
- juice of ½ lime
- 1 garlic clove chopped fine
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup chopped cilantro
