    My thyme roasted sweet potatoes are delicious and easy to prepare it takes only 30 minutes.

    Thyme Roasted Sweet Potatoes Cooking Tips:

    The thicker you slice the sweet potatoes the longer they'll take to cook. This same recipe works if you want to candy sweet potatoes just add ¼ cup light brown sugar and water to cover potatoes cook until sweet potatoes are soft.

    Can you make ahead?

    Fridge: After sweet potatoes cool off, place in an airtight container in the fridge for 7 days max.

    Reheating: Pop in a 350-degree oven for 10 minutes.

    You can use Chinese five spice or all spice in place of the cinnamon and nutmeg.

    Roasting draws out the natural sugars and gives sweet potatoes a deep rich flavor that boiling can never do.

    Ingredients
      

    • 3 lbs. sweet potatoes peeled and sliced ½ inch thick
    • 2 tablespoons oil
    • ½ teaspoon salt
    • ½ teaspoon cinnamon
    • ½ teaspoon nutmeg
    • ¼ teaspoon cayenne
    • ¼ teaspoon dry thyme

    Instructions
     

    • In a bowl toss all ingredients together, lay on a foiled lined baking sheet lay out sweet potatoes and cover with foil; bake for 20 minutes, flip potatoes over, cover and cook for 10 minutes. Fork should easily pierce sweet potatoes, remove from oven serve hot.

    Notes

    Preheat oven to 400 degrees
