Thyme Roasted Sweet Potatoes
Roasting draws out the natural sugars and gives sweet potatoes a deep rich flavor that boiling can never do.
Servings: 4 persons
- 3 lbs. sweet potatoes peeled and sliced ½ inch thick
- 2 tablespoons oil
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon cayenne
- ¼ teaspoon dry thyme
In a bowl toss all ingredients together, lay on a foiled lined baking sheet lay out sweet potatoes and cover with foil; bake for 20 minutes, flip potatoes over, cover and cook for 10 minutes. Fork should easily pierce sweet potatoes, remove from oven serve hot.
Preheat the oven to 400 degrees.
This same recipe works if you want to candy sweet potatoes just add ¼ cup light brown sugar and water to cover potatoes cook until sweet potatoes are soft.
