4medium sized russet potatoes or sweet potatowashed
1warm rotisserie chickenskin removed, boneless
2cupsfavorite bbq sauce
½cupshredded cheddar cheesegarnish, optional
4oz.sour creamgarnish, optional
2green onionschopped, garnish, optional
Pierce potatoes with a fork all over, pop 2 potatoes in the microwave for 5 minutes. Turnover, cook for another 5 minutes. Touch potatoes to see if it’s soft to touch, if not cook for another 2 minutes. When potato is finished cooking, cut down the middle evenly season potato with ¼ teaspoon salt, ¼ teaspoon pepper and 1 tablespoon butter.
While potatoes are in the microwave, over a bowl remove skin and bones from chicken and pull meat apart with your hands or two forks. Once all meat is in bowl, pour bbq sauce over and evenly coat chicken. Add chicken on top of potato and garnish with chicken, cheese, sour cream and green onions.
