Chicken Tomato Basil Pasta
Tips for success: This whole meal can be done at one time, but it has to flow like a great dance. Before you season your chicken, begin heating your pasta water, this normally takes 10-15 minutes. Season your chicken and cook. While chicken is in the oven, cook your pasta and tomato basil sauce. When your chicken is cooling off. Portion out your pasta, then chop chicken and portion it, then add your tomato basil sauce, basil and cheese. Chop your basil at the last second, basil begins to darken after it’s chopped. To avoid that you could tear the basil by hand.

- 8 quart pot
Ingredients
Pasta:
- 8 oz. whole wheat spaghetti
- 1 tablespoon avocado oil
Tomato Basil:
- 1 tablespoon garlic chopped fine
- 1 teaspoon Italian herb
- 1 bay leaf
- ¼ cup white wine
- 29 oz. can tomato sauce
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon sugar
- ½ cup chopped basil garnish
- 1 cup shredded parmesan garnish
Chicken:
- 4-6 4 oz. chicken breast or thighs skinless boneless chopped in 1 inch pieces
- 1 tablespoon avocado oil
- 2 teaspoons low sodium creole seasoning or poultry seasoning
Instructions
- Turn on the heat to high in a large pot filled with water bring to a boil, once water is at a full boil, add pasta and cook for 8 minutes, stirring occasionally. Drain pasta, add the avocado oil and toss to combine.
- Turn on the heat to high in a large pot in a medium pot spray with cooking spray for 2 seconds add the garlic, Italian herb and bay, cook for 30 seconds. Add the white wine, tomato sauce, kosher salt, black pepper and sugar. Bring to a boil, then simmer for 6 minutes. Remove bay leaf before serving.
- In a medium bowl add the chicken and avocado oil, toss to combine. Add the creole seasoning, toss to evenly coat chicken. Turn on the heat to medium-high in a large skillet add the chicken, cook for 7 minutes, stirring constantly. When there’s 2 minutes left add 4 oz. of tomato sauce, reduce heat to medium-low.
- Serve each 4 oz. of pasta, 4 oz. chicken, 2 oz. tomato sauce, 2 tablespoons chopped basil and ¼ cup parmesan.
