Blueberry Waffles
Tips for success: You can use an alternative milk if you would like. I use avocado oil but any other oil will work except olive. A gluten free flour works as a great substitute. Waffles can be frozen in a freezer storage bag for 3 months.

Equipment
- Dry measuring cups
- Dry measuring spoons
- Liquid measuring cup
- 2 medium mixing bowls
- Waffle iron
Ingredients
- 1 ½ cups unbleached all-purpose flour
- ½ teaspoon kosher salt
- 1 ½ teaspoon baking powder
- 2 tablespoons sugar
- 1 cup fresh blueberries
- 2 large eggs
- 1 ½ cups milk
- 4 tablespoons oil
- 1 teaspoon vanilla extract
- cooking spray
- maple syrup
Instructions
- In one bowl mix the flour, kosher salt, baking powder, sugar and blueberries.
- In another bowl the slightly beat eggs, milk, oil and vanilla together; pour wet mixture into dry and mix until smooth.
- Heat waffle iron to desired temperature or color and spray with cooking spray for 3 seconds. Pour enough batter to cover bottom of waffle iron, close waffle iron and cook for 3-4 minutes. Remove and continue until all waffles are made. Keep made waffles warm in a 200-degree oven.
- Serve with maple syrup or syrup of choice.
Notes
Preheat oven to 200 degrees
