Blueberry Waffles

Tips for success: You can use an alternative milk if you would like. I use avocado oil but any other oil will work except olive. A gluten free flour works as a great substitute. Waffles can be frozen in a freezer storage bag for 3 months.

Equipment

  • Dry measuring cups
  • Dry measuring spoons
  • Liquid measuring cup
  • 2 medium mixing bowls
  • Waffle iron

Ingredients
  

  • 1 ½ cups unbleached all-purpose flour
  • ½ teaspoon kosher salt
  • 1 ½ teaspoon baking powder
  • 2 tablespoons sugar
  • 1 cup fresh blueberries
  • 2 large eggs
  • 1 ½ cups milk
  • 4 tablespoons oil
  • 1 teaspoon vanilla extract
  • cooking spray
  • maple syrup

Instructions
 

  • In one bowl mix the flour, kosher salt, baking powder, sugar and blueberries.
  • In another bowl the slightly beat eggs, milk, oil and vanilla together; pour wet mixture into dry and mix until smooth.
  • Heat waffle iron to desired temperature or color and spray with cooking spray for 3 seconds. Pour enough batter to cover bottom of waffle iron, close waffle iron and cook for 3-4 minutes. Remove and continue until all waffles are made. Keep made waffles warm in a 200-degree oven.
  • Serve with maple syrup or syrup of choice.

Preheat oven to 200 degrees
