Buttermilk Pancakes with Fruit cocktail
Tips for success: Buttermilk takes these pancakes to the next level; however, you can use your favorite milk as a substitute. A gluten free flour works as a great substitute. For your fruit cocktail, you can use a combination of all your favorite fruits. You can use your favorite syrup, grade A amber maple is my favorite. Pancakes can be frozen in a freezer storage bag for 3 months.

Buttermilk Pancakes with Fruit Cocktail

Equipment
- Chef knife
- Cutting board
- Large mixing bowl
- Small mixing bowl
- Dry measuring cups
- Dry measuring spoons
- Liquid measuring cups
- Large skillet or Griddle
Ingredients
- Pancakes:
- 1 cup unbleached flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 2 tablespoons oil plus more for cooking
- 1 cup buttermilk
- ½ teaspoon vanilla extract
- 1 large egg
- maple syrup
- Fruit Cocktail:
- 1 apple cut up
- 6 strawberries tops removed quartered
- 4 oz. fresh blueberries
- ¼ wedge lemon juice
Instructions
- In a large mixing bowl add the flour, sugar, baking powder, baking soda, kosher salt stir together. In another small bowl, add the buttermilk, vanilla extract and egg, mix together. Then add the wet ingredients to the dry ingredients, stir until smooth.
- Turn on the heat to medium in a large skillet, heat 2 tablespoons of oil and pour ¼ cup of batter per pancake, cook until top batter has small air bubbles about 3 minutes. Flip and cook for another minute and half. Serve with grade A maple syrup.
- While pancakes cook stir, apple, strawberries, blueberries and lemon juice together, serve on the side or on top of pancakes.
