Cheeseburger Sliders with Homemade Potato Chips
Tips for success: When you are drying the potatoes off make sure they are not overlapping. Any water left on the potatoes will cause the hot oil to pop and you can get a serious burn from the grease. This burger recipe works great for turkey burgers too, add ½ cup of panko and ¼ cup milk when mixing burgers.

Cheeseburger Sliders with Homemade Potato Chips

- Chef knife
- Cutting board
- 2 Large mixing bowls
- Dry measuring spoons
- Slotted spoon
- Spatula
- Baking sheet
Ingredients
Potato chips:
- 2 medium russet potatoes sliced ⅛ to ¼ inch
- canola oil for frying
- 1 tablespoon kosher salt
Cheeseburgers:
- 2 lbs. 80/20 ground chuck
- 1 ½ teaspoons kosher salt
- 2 teaspoons black pepper
- 2 teaspoons garlic powder
- ½ teaspoon cayenne
- 1 tablespoon worcestershire sauce
- 4 tablespoons canola oil
- 8 slices cheddar cheese cut in half
- 16 hamburger pickles
- mayonnaise optional
- yellow mustard optional
- ketchup optional
- 16 King Hawaiian sliders toasted
Instructions
- Add the sliced potatoes to a bowl and cover with water, stir the potatoes with your hand and let sit for 30 minutes. Drain potatoes of water, place 3 layers of paper towels on a baking sheet, lay potato slices in rows, then press another 3 layers of paper towels on the top of the potatoes. Meanwhile, turn on the heat to medium in a large pot filled half way with canola oil, bring to 400 degrees.
- Once oil is hot fry potatoes in batches for 1 to 2 minutes until golden brown, drain on a paper towel lined baking sheet, liberally season with salt immediately.
- Preheat oven, in a large bowl mix ground beef, kosher salt, black pepper, garlic powder, cayenne and worcestershire. Roll into 2 oz. patties and press down gently. Turn on the heat to medium in a large skillet or griddle add 2 tablespoons of oil, add 5 patties at a time and cook for 3 minutes each side. Sit on a platter, add cheese and pop in warm oven.
- To serve, spread the mayonnaise on both sides of bun, add 2 pickle, burger patties and top bun, serve chips on the side.

Preheat oven to 200 degrees
