Smoked Salmon Omelette
Tips for success: Smoked salmon is different from your traditional sausage and bacon but you can have 2 ounces of smoked salmon that’s only 120 calories of goodness. You can find out how many calories 2 ounces of bacon have. I only use large brown eggs, they have a richer yolk which equals flavor. Practice makes perfect when it comes to cooking an omelette.
Equipment
- Chef knife
- Cutting board
- Dry measuring spoons
- Small skillet
- Small bowl
Ingredients
- 1 large egg
- 2 large egg whites
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1-2 teaspoons chopped Italian parsley
- 1 tablespoon avocado oil
- 2 ounces smoked salmon
Instructions
- In a small bowl add egg, egg whites, kosher salt, black pepper and Italian parsley. Beat until eggs are homogenous. Turn on the heat to medium-high in a small non-stick skillet add avocado oil, add egg mixture and stir, once or twice, every 15 seconds push outer cooked eggs from the edge to the center. Once eggs begin to solidify, turn the heat to low, add smoked salmon. Fold over half the omelette over salmon, tilt a plate by the skillet and flip the skillet egg on to plate. Serve hot and garnish with smoked salmon.
