This green olive vinaigrette is special, so special I made it for a non-olive lover and converted them to eating olives. A really easy recipe that's packed with flavor!

Cooking Tips:
Make sure you buy pitted olives.
If serrano is to spicy for you omit it completely or use a jalapeno.
Can you make ahead?
Fridge: Place in an airtight container in the fridge for 30 days max.

Green Olive Vinaigrette
Ingredients
- ½ cup extra virgin olive oil
- ¼ cup champagne vinegar
- 2 garlic cloves smashed
- ½ serrano top removed
- 2 teaspoons Dijon mustard
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 12 green olives with pimiento sliced
Instructions
- Add all ingredients in food processor except olives and blitz on high for 1 minute. Transfer to a bowl and stir in the olives. Serve over grilled or fried chicken, fish or vegetables.
