This ailoi (garlic mayo) is for the heat seekers like myself. Garlic, mayo and jalapeno, is a great combo! This recipe is easy to make and great for any burger, sandwich or a dipping sauce.

Tips for Success:

To char jalapeno’s place over an open flame or heat a skillet until it’s smoking hot and char evenly place in a plastic bag for 3 minutes. Remove and peel charred skin off. If you’re in a rush you can skip the charring of the jalapenos. Dice the jalapenos and proceed with the recipe.

  • 2 jalapeños charred, peeled, diced
  • 3 garlic cloves charred.
  • 8 oz. mayonnaise
  • ¼ teaspoon salt


  • In a food processor, add jalapenos, garlic, mayonnaise and salt, blitz on high for 1 minute. Keep aioli in a airtight container in the refrigerator for 14 days. Use in place of mayonnaise.
