If you want to make an amazing mayonnaise an Aioli is the best one you can make. It's super easy to make and it only takes 5 minutes.
Every now and then it's lovely to make your own mayonnaise. When I do I use this aioli recipe to make the perfect mayonnaise.
Aioli is garlic mayonnaise. You can use garlic in a variety of ways to impart the flavor. You can use roasted garlic, roasted garlic oil, charred garlic, or chopped garlic. The options are unlimited. This will become a new favorite in your house. Use it anywhere mayonnaise is called for burgers, french fries, sandwiches, tuna salads, etc.
Aioli Cooking Tips:
Making the aioli in a food blender is the best tool. The reason is you can pour your oil in a slow steady stream which helps make the mayonnaise hold better. However, you can use a food processor to do the same. Mix the other ingredients first. Then add the oil and blitz until the mayonnaise is smooth and creamy.
Can you make ahead?
Fridge: Store in an airtight container in the fridge for up to 3 months max.

Aioli
Ingredients
- 3 egg yolks
- 3 garlic cloves
- 2 teaspoons Dijon mustard
- ½ teaspoon cayenne
- ½ lemon juice
- ½ teaspoons salt
- ½ teaspoons black pepper
- ½ cup olive oil
Instructions
- In a food blender add the egg yolks, garlic, Dijon, cayenne, lemon juice, kosher salt and black pepper. Pulse 3 times, turn the blender on high and slowly add the olive oil, mix until aioli has the consistency of mayonnaise, about 30-45 seconds.
