Every now and then it’s lovely to make your own mayonnaise. When I do, an aioli is the perfect mayonnaise. An aioli is a garlic mayonnaise. You can use the garlic in a variety of ways to impart the flavor. You can use roasted garlic, roasted garlic oil, charred garlic or chopped garlic. The options are unlimited. This will become a new favorite in your house. Use it anywhere mayonnaise is called for burgers, french fries, sandwiches, tuna salads etc.

Aioli Cooking Tips:

Making the ailoli in a food blender is the best tool.  The reason is you can pour your oil in a slow steady stream which helps make the mayonnaise hold better. However, you can use a food processor to do the same. Mix the other ingredients first. Then add the oil and blitz until the mayonnaise is smooth and creamy.

Can you make ahead?

Fridge: Store in an airtight container in the fridge for up to 3 months max.
